What are you thankful for this holiday season? I am thankful for all the hardworking farmers who make the Local Box possible each week. The farming heroes this week include: Lightsey Farm, My Fathers Farm, G & S Groves, Gundermann Acres, Tecolote Farm, Animal Farm, and Fruitful Hill. Let’s enjoy the fruits of their labor, including tons of mean greens!
Breakfast: The most important meal of the day, so let’s do it right. I am a “sleep till the last minute possible type” so I like to prep breakfast the night before. Mini Frittatas are my new favorite and the best part is they are customizable to what you like or have in the kitchen. Bake them on a lazy Saturday or Sunday night to have for Monday morning. For this weeks variation I will use broccoli and green garlic from the Local Box and top with diced avocado.
Lunch: This week I am going to use my sweet potato’s and arugula or salad mix for a Roasted Sweet Potato, Goat Cheese and Arugula Sandwich. This will blow your normal lunch sandwich out of the water. Spring for a really good bread from Sweetish Hill (it will take your sammy to the next level) and your co-workers will have some major food envy.
Dinner: According to my weather app it is going to be cold and rainy this weekend in central Texas. This calls for couch snuggling and Portuguese Green Soup. This recipe calls for 1 bunch of Collard greens but I am going to use half of the greens (Kale, Collard or Mustard) from the Local Box and add Asian greens as well.
Drink: When I think of spearmint, I think of tea. Try this Fresh Mint Tea recipe using spearmint and oranges for a refreshing and simple tea. Tea not your jive? How about an Asian Pear and Strawberry Smoothie. If you are a serious green smoothie-er, try this Asian Pear Green Smoothie.
