The chefs in our prep kitchen have been at it again–we are excited to announce our new summer menu of meal kits! Greenling’s recipe kits are famous for getting dinner on the table quick, and the latest collection of meals is no exception.
There aren’t really 500 meal kits of summer, but we do have a huge new menu. Inspired by the bounty of Texas summers, these convenient dishes feature local and organic produce that’s at the height of the season including basil, zucchini, cucumbers, okra, tomatoes, peaches and peppers. As always, all the ingredient in our meal kits arrive prepped and portioned so you stay cool, calm and collected in the kitchen.
This collection of five dishes is perfect for warm summer nights. You’ll
start the week with (1) Summer Spinach Salad with Chicken and Peaches, a fresh spinach salad topped with local peaches, sautéed chicken breast, red onions, and chèvre. Next up are (2) Gyro Tacos, a (3) Caprese Sandwich with Spinach Salad, and a spicy(4) Pasta al Pomodoro with chicken. (5) Thai Stir-Fry with Eggplant and Beef is a spicy and satisfying finish to the week’s menu.
Our spring 2-meal kits were some of the most popular ever, and these summer options promise to give them a run for their money! In our Summer 2-Meal Kit #1, organic, pastured chicken sausage, organic summer produce, and fresh herbs are the stars of the show. This gluten-free meal kit contains (1) Herbed Sausage and Summer Squash Skillet, and (2) a spicy Southwestern Quinoa Pilaf, full of peppers and onions.
Only 20 minutes stand between you and dinner, thanks to the easy summer recipes in 2-Meal Kit #2. (1) Gyro Tacos offer Mediterranean flavors, while a (2) Thai Stir-Fry with Eggplant and Beef is sure to spice things up. As with all our meal kits, all ingredients are organic and/or local and sustainably produced, and they will arrive portioned and ready to cook.
Single Meal Kits
If you’re looking to expand your rotation of summer recipes, we have a bevy of single meal kits to liven things up! Our summer take on pizza is a Pesto Provolone Pie topped with tons of fresh seasonal veggies. Ratatouille Pasta and Mediterranean Couscouswill help satisfy those eggplant cravings you’ve been suffering since wintertime, and nothing showcases garden tomatoes like our Caprese Sandwich, made with fresh mozarella and bakery baguettes. Finally, Gyro tacos offer a twist on tradition– seasoned ground beef is dressed with cucumbers, lettuce, tomatoes and our house-made yogurt sauce.
These side dishes are all gluten-free and vegetarian, ideal for a potluck, picnic, or just an easy weeknight dinner. Our office’s personal favorite is the Basil Balsamic Peach Salad. This dish of local peaches enhanced with balsamic vinaigrette and a hint of basil is an exciting way to enjoy peaches, and they taste even better since they arrive pre-cut– no pits to remove! Another cooling side is our Roasted Eggplant Salad, a delicious mix of roasted eggplant, bell pepper, green onion, and parsley tossed in our house-made yogurt sauce.
Three Southern-inspired hot sides will hit the spot for comfort food-cravers. The quintessential Okra and Tomatoes is a classic southern side dish, and one of summer’s simplest pleasures. OurCheesy Zucchini Rice offers all the comfort of your favorite cheesy squash casserole, but without the heat of the oven! This stovetop version comes together in less than 30 minutes! Finally, Mexican Squash Saute is just the thing for rounding out a quick summer supper. Customize the dish to your family’s taste by using all the jalapenos and spices, or just a few.
