We are in full swing cold weather season and this Texas girl is never ready. But, it means new winter greens in the Local Box! This week we welcome Yukina, an Asian spinach. If this is the first time you’ve hear of yukina, dont worry- you aren’t alone. I took a peek at the yukina in the warehouse yesterday and it looks beautiful and ready to enjoy.
Meal One: Yukina is a mild, tasty green that can add flavor, texture and nutrition to the stir-fry of your dreams. I am going to make Yukina Savory With Sweet Chili Shrimp using the yukina and green garlic from the Local Box. I am also going to add the broccoli to the stir-fry for a little extra crunch. Have extra carrots, bell pepper or other vegetables lying around? Throw them in too!
Meal Two: I’m so glad sweet corn is making an appearance in the Local Box this week. Let’s try Corn and Winter Squash With Spinach and Bacon. This recipe calls for butternut squash but any winter squash will work! I am going to pair that with a Sweet Watermelon Radish Salad. For dessert I am going to use my persimmons to make Persimmon Cookies. These sweet suckers may have to sweeten in a paper bag a few days before they are ready to use, but in the mean time they make a for beautiful table decoration.
Meal Three: With the kale or chard I am going to make Beer-braised Sausage and Kale. Sausage with any greens is one of the best winter combinations in my mind! While I’m cooking I think I am going to use the key limes for a Key Lime Margarita. I tend to lean toward tart instead of sweet margaritas and key limes fit the bill. If you aren’t into a dinner drink try these Key Lime Pie Bars. A key lime pie in bar form!
