Meal One: If you’re having any trouble getting your veggies in daily, try this yummy Green Bean & Yellow Squash Casserole! No canned soup or onion mix packages here! This entirely homemade is super delicious and can pack a lot of veggies into one dish.
Meal Two: This colorful, freshly-made Peach Mango Salsa tastes wonderful on fish tacos! The garlic and veggies nicely complement the peach and mango flavors and it’s super easy to prep–just toss in all chopped ingredients and it’s done!
Meal Three: Rawr! Use the dino kale (also called Tuscan kale) for this Dinosaur Kale with Baby Potatoes recipe! Switch out the red potatoes from your Local Box for the baby potatoes in the recipe…cooking the dino kale really brings out all of the flavors and pairs well with the seasoned potatoes. Add a hard-boiled egg for an added protein kick!
Meal Four: There’s something so simple about this Chard, Hazelnut, and Strawberry Salad recipe that makes for a light and refreshing lunch or snack. The queso cheese paired with berries as well as the crunchy hazelnuts take this simple salad to the next level!
